You know I don't think I have ever seen the '92 Rumble, that can be next on the list. Any other suggestions are more than welcome, although I do quite fancy reliving the whole of 1997 at some point

I personally don't watch, but for me it now gets filed under very skilled live acting for most of the wrestlers under incredibly demanding circumstances. Especially compared to boxing - at least wrestling doesn't pretend what it is about. Struggle to watch boxing because of the attempted "drama" element.

the '92 rumble is a great highlight of the talent from the golden era of the 80s, and the introduction of fresh blood from the new era of the 90s. Bret vs Piper at Mania 8 (1992) is easily a top 5 match from Roddys career. Brets fingerprints are all over this match and it's excellent.
Flair vs. Savage is also from the same show, and i don't need to sell it with those two facing off against each other.
1997 is the final bridge from the New Generation Era to the Attitude Era. Arguably 1997 is their best ever year creatively. The Hart Foundation vs USA feud in the summer is a highlight but there's so much more going on to love too. Bret, Austin, Foley, HBK, Taker/Paul Bearer . . . all involved in classic stuff.
