Yesterday on the way home from the national park (it was a public holiday) I stopped off at a nyama choma joint.
Hands-down, the best ribs I have ever had. This guys has a massive braai setup with pork ribs, whole chickens and wors.

Was only a few years ago that I discovered the gem that is pork belly, now I do it often. For braai, rashers and pork neck chops works the best, loin can become a bit dry if it's not thick enough.

I only do staanribbetjie, for me pork belly is best done in the oven. True. Not quite perfected mine in the Weber yet, but getting there. Yeah, my issue has been that low to medium heat for 2 hours have been to high. Still learning how to use the Weber properly.
