Saw the pan fry then lost interest. But did listen to what he said....I never use a thermometer....3 minutes a side on hot coals and done for a one inch steak...a thicker one I add a 1 or more depending on thickness....I rest it for as long as I cook it in a 50 to 60 degrees enviroment ( either a tray close to the coals on your bottom braai door or above the heat off the coals and direct heat ) and thats where the heat goes through the meaty part ( rare ) but doesn't cook it. NOTHING WORSE THAT A COLD BLUE SECTION. I always season for at least 30 minutes before I cook....basically the time it takes to get the coals right after lighting....thats when I season...I season with garlic powder , salt and Ground black pepper., I am liberal with that so it takes some grinding.Chilli wrote: Tue Sep 07, 2021 5:23 am I quite like watching his videos...............

Then I set my timer on my phone and trust it. If your coals are right and you have trimmed off excess fat thats going to cause flare ups you can leave it and relax...some burning is not a bad thing.

The best steaks I've tasted was taken right of the fire. Cut on the rooster with a knipmes and eaten with the hands, caveman style. I've tried this resting thing a few times and I have to say I'm not a fan of lukewarm steak that is ice cold halfway through.

This utter bullshit
When you take meat off the fire, it continues to cook for as much as 10 minutes. In fact the temperature will go up in the center as the residual heat travels inwards and it starts to cool on the outside. Joe is 100% correct. Cook it, haul it off and eat it. By the time it gets to your plate it's going to be rested anyway. Otherwise do as Joe says and slice it right there. Be the best steak you've eaten. 

Chicken fillet burgers on the coals tonight. Also threw a whole chicken in a tray above the coals in the microwave. 50 minutes roast and then we will shred it and add to the curry paste my wife prepared and let soak overnight. I already scoffed the giblets which I threw in a small tray covered in peri peri....

Look I enjoy curry but stay away from chicken because it's generally dry in the sauce. We were asked to do a chicken curry for the boys school for 50 people. We asked some friends and the one mate an ex chef suggested we make a sauce and roast 4 chickens and then follow the procedures above. It was outstanding and I really enjoyed it.
Same with tonight. The sauce really soaked into the meat overnight and that brought the heat....not sweaty brow heat...more like a tingle all over the mouth heat. ...the chicken meat was sooooo tender. And that smoked Flavor....
A winner for me...

Chilli, on a sidenote, what is your opinion of bread maker machines? Worth it? At least better than Spar's bread?

Bread Makers are great. You need to make your own dough with good quality flour and no preservatives. If I eat a bread roll from Spar I die from heartburn, if I make bread myself I can eat it without a problem.

We had a braai day with Paul Roos 150th year celebrations. Jan Braai lead the day. There were like rugby fields of braais and fires. Bread is my biggest weakness. It's hella addictive. But only the sandwich loaf stuff, brown or white has that effect. If I have a slice of good sourdough toast it seems to satisfy me. Its a lot of work to cut up a 5 kg piece of meat..
MIL took the Picanna and another piece...I carved at her place because we had dinner there.
Had a largish piece that looks very much like Silverside...which we will roast..
And of course some decent chunks of rump ..... Also looking forward to this on Friday
