Low and slow over medium coals for 30 minutes, then boom onto hot coals to seal it.
Twas Lovely.
I Swiss trim it myself.

Hows this chargrilled lineup I did for a client in Stellenbosch
Obviously my Charcoal oven...a grill pit with some specialised chargrilling equipment....fryer ....chip dump.....
Basically a very upmarket version of my wifes shop.....r
Not bad for a boiler maker / Sheetmetal worker / burger flipper

Nipper, when did you last buy meat from Continental? They were always a bit pricey but are no really expensive. And I find that the quality of their meat has gone down. Buying more from Merino and Peridgevale.
Your workmanship looks amazing.Sards wrote: Tue Jun 08, 2021 11:14 am

I bought some sosatie wors from their Walmer deli on Sunday, it was great. I have to agree, their prices are insane. Perridgevale is great, just around the corner from my home tooChilli wrote: Tue Jun 08, 2021 11:27 amNipper, when did you last buy meat from Continental? I have been dying to do this lineup...was going to do it for my wifes next shop.....still will....but no charcoal pit....I tried to convince the chef that he didnt need it with the Diablo , but he wouldn't budge.....mind you those turbo cooks are the bomb....30 seconds per sideChilli wrote: Tue Jun 08, 2021 11:28 amYour workmanship looks amazing.Sards wrote: Tue Jun 08, 2021 11:14 am

Sosatie wors? Klink fishy.
Skaapkop is koningskos!
Springboks, Stormers and WP supporter.
It's good, but the ingredients makes the casing easy to break.
